Ian Carleton is on a one-man mission to introduce a sustainable dining and hospitality experience to everyone he comes across. After 11 years in the restaurant business, he has opened up Saint Fox Cider with a business partner and is experiencing radical growth in its sophomore year. A passionate advocate for real food and real experiences, Ian has a diverse enough background to have won a literary award from an English language publishing house in Hong Kong. He also holds another distinction: since Day One, he has been a part of Hurts Donut, and is the lead baker, trainer and an integral part of a local company that started five years ago with one tiny shop and now includes 19 locations and over 600+ employees. From farm-to-table concepts to brewing to creative writing, Carleton approaches every scenario with a dynamic passion.
